Ingredients for 1 Serving
1 tortilla (or flavored wrap, I used spinach)
1/3 cup hummus (I like Roasted Red Pepper Hummus)
2 slices cucumber (sliced lengthwise)
1 handful fresh spinach leaves
sliced tomatoes 1/4 avocado (sliced) microgreens (Fresh)
- Cucumber is sliced thinly, skins and seeds and all. I halve the cucumber instead of slicing it in rounds, then slice it lengthwise so it’s one less veggie chunk to escape out the sides with each bite. - Spread the hummus on the bottom ⅓ of the wrap, about ½ inch from the bottom edge but spreading out the the side edges. - Layer the cucumber, spinach leaves, tomato slices, avocado slices, microgreens - Fold the wrap tightly, as you would a burrito, tucking in all of the veggies with the first roll then rolling firmly to the end. Cut in half and enjoy.
Avocado Toasts with Micro Greens + Sesame

Ingredients
• 2 slices multigrain or gluten-free bread, toasted
• 1 ripe organic avocado, pitted, peeled, and sliced
• ¼ lemon, cut into 2 wedges
• Kosher salt and freshly ground black pepper
• ½ cup micro greens
• ¼ teaspoon toasted sesame oil
• 1 teaspoon sesame seeds, toasted
Divide avocado slices evenly and place on top of toast slices. Using a butter knife, carefully smash avocado slices. Squeeze lemon slices over avocado, sprinkle with salt and pepper, top with micro greens, drizzle with sesame, then complete with a sprinkling of sesame seeds.
Cairo’s fave salad
If you have enough micro greens, use them straight, if not, combine them with other salad mix or lettuce. Add grated carrots, chopped scallion greens, tomatoes or chopped red pepper and avocado. My new thing is to squish/crumble Trader Joe’s goat cheese with honey onto the salad - divine. Toss, add dressing of choice and you're in salad heaven!
